The name Nōshi combines Nō, symbolising skill and artistry, with Shi, the Japanese word for four. Here the number four represents balance and harmony, drawing on the four elements of beauty: Sabi (simplicity), Wabi (imperfection), Shibui (refinement), and Yugen (grace). These elements inspire and inform our core pillars: food, drink, service, and surroundings.
